Great moist banana walnut cake, with a cinnamon flavor. This banana cake has no oil, or butter or egg of any sort. The moist factor comes from heavy cream. It rises beautifully, soft and has a great taste!!!
- ½ cup whole wheat pastry flour
- 1½ cup all-purpose flour / Maida
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup condensed milk
- ½ cup sugar
- ½ cup milk
- 2 ripe banana (peeled and cut into pieces)
- 1 teaspoon vanilla essence
- 1 cup heavy cream
- ½ cup walnut pieces
Method :
- Preheat oven to 350 degrees F. Prepare 9" cake pan by buttering/greasing and lightly flouring.
- For the cake:
- Add all purpose flour, baking powder, baking soda and salt to a bowl. Stir through flour mixture until combined well.
- Blend condensed milk, sugar, milk, vanilla essence and banana pieces into a pure.
- Then add heavy cream and again blend until combined well.
- Now add this to flour mixture and gently mix them and in the end, fold in walnut pieces.
- Pour the cake batter evenly in the prepared cake pan.
- Bake the cake for 35-50 minutes until a toothpick / cake tester inserted in the center comes out clean.
- Remove from the oven and allow to cool in the pan for 15 minutes and then turn over the cooling rack and cool completely.
Extra tip: Pour chocolate sauce over cake and garnish it with walnut pieces. You can use 1 cup whole wheat flour and 1 cup all purpose flour for this cake.
